Dining Room Menus
Our Timber Dining Room menus offer many new and creative selections, in addition to daily specials and to those items that have been guest favorites for years. Using as many of our own farm-grown berries, fruits, hazelnuts and vegetables as possible, we are committed to providing an extraordinary culinary experience.

Pan-Fried Maryland Blue Crab Cakes
With papaya salsa and cilantro aioli
Chicama Flatbread Pizza
Topped with grilled chicken, caramelized Vidalia® onions, artichoke heart and smoked tomato sauce
"Big Red Mill" Cedar Plank Salmon
Wild Atlantic salmon fillet, roasted on red cedar and served with wild rice pilaf, sautéed fresh vegetables and Kimmel Vignoles Cream
Braised Free Range Beef Short Ribs
Short ribs, braised in house-made blackberry barbeque sauce and served with chipotle baked beans and tempura onions
Bucatini with Buffalo Meatballs
Bucatini pasta with free range buffalo and shiitake mushroom meatballs, smoked tomato marinara, parmesan crisp and fresh herbs
Grilled Polenta Cakes
A blend of cornmeal, fresh herbs and parmesan cheese, these polenta cakes are served with marinated artichoke heart, grilled asparagus, caper berries and smoked tomato ragout
Marinated Buffalo Ribeye
Ten-ounce free range buffalo ribeye marinated with Boulevard Stout, grilled and serve with pan-fried fingerling potatoes, sautéed fresh vegetables and zinfandel-soaked sour cherry sauce
Slow Roasted Prime Rib
Grain-fed Nebraska beef, slow roasted and served with baked potato, sautéed fresh vegetables, creamed horseradish and au jus

Foundation Burger
Half pound ground bison burger with Maytag® blue cheese, hickory smoked bacon, grilled onions, lettuce and tomato
Grilled Garden Vegetable Focaccia
Tomato and summer squash are grilled and topped with avocado and pepper jack cheese. Served on tomato focaccia with cilantro pesto.
Kimmel Orchard Salad
Baby spinach, candied hazelnuts, julienne Granny Smith apple, Maytag® blue cheese and oven-dried sour cherries, tossed with blackberry-infused vinegar and olive oil
Vegetable Frittata
Filled with roasted tomato, asparagus, onion and Alouette® cheese. Served with your choice of toast
The Laughing Cow
Two eggs scrambled with Laughing Cow® light original Swiss and fresh chives. Served with a toasted Wolferman's® English muffin and fresh fruit
Fruit Parfait
Yogurt, fresh berries and house-made granola
